Pomegranate Brie Bruschetta
December 12, 2025
Looking for a holiday appetizer that belongs on a magazine cover? This might be it. With pomegranate, cranberry and brie, this bruschetta will be just as balanced as it is stunning.
“The key is using ingredients that naturally add nutrients, antioxidants and brightness so the dish feels special without being overly rich,” says Samantha Oldman, RD, with Hartford HealthCare Medical Group.
Here’s what makes this appetizer stand out — both in flavor and nutrition.
1. Pomegranate seeds
These bright seeds don’t just offer a gorgeous color. Pomegranates are rich in antioxidants, vitamin C and polyphenols, all of which help support immune health during cold and flu season.
“Pomegranates offer natural sweetness, so you can add big flavor without relying on excess sugar,” says Oldman.
Their crunch also gives the bruschetta a refreshing contrast to the cheese.

2. Cranberries
Fresh or frozen, cranberries bring brightness and acidity that help balance the richness of the brie. And when you choose unsweetened cranberries, you get the benefits without added sugars.
“Cranberries are packed with antioxidants and fiber, which can support digestion and overall gut health,” says Oldman.
They aren’t just for your turkey — that sharp cranberry flavor pairs perfectly with traditional holiday ingredients.
3. Brie cheese
A small slice goes a long way — which is key for creating a satisfying but balanced appetizer. Plus, each bite is packed with protein and calcium.
“Brie has a naturally rich flavor, so you only need a thin slice to make the bruschetta feel luxurious,” says Oldman. “Using it in small portions helps keep the dish lighter overall.”
Because it melts easily, it creates a smooth texture without extra butter or cream.
4. Baguette slices with cooking spray
Instead of oil-soaked crostini, this recipe lightly coats baguette slices with cooking spray — just enough to make them crispy without the extra fat.
“Cooking spray gives you the texture of toasted bread with far fewer calories than brushing with oil,” Oldman notes.
Using thin slices also helps keep portions reasonable while still giving you the classic crunch you want in this pomegranate brie bruschetta.

5. Fresh basil
A sprinkle of fresh basil pulls any recipe together. Herbs brighten the flavors, balance the sweetness of the fruit and offer their own anti-inflammatory benefits.
“Fresh herbs add a lot of dimension without extra sodium or calories,” says Oldman. “They’re an easy way to make holiday dishes feel fresher and more vibrant.”
Plus, the bright color also elevates your presentation, with almost no extra effort.
